    Actually the steel is to remove the curl in the edge, which in turn restores the edge so the steel maintains the edge between resharpening

    Well i see people are still responding to this. The question has come up about religion. After reading many post from many different topics I have come to the conclusion that IRON is bible thumping. Not saying it's bad don't misinterpret it but there is a little thumping going on over here. I definitely here the beating of a drum in the back ground.
