Axe I'm sure you've done this, but if not here goes. You may or may not have to initially configure your joystick so your 'puter will recognize it meaning the general movements.
Once you fire up BF2 go to options, controls...You know all that.
For up and down all you have to do is set one direction and it will do both so to pitch forward, click that area and push your stick forward. That will set BOTH forward and backward. To set roll, click on roll left and move the joystick directly left. This will set BOTH roll left and roll right. To steer left, click on steer left and twist your stick to the left. This will set BOTH steer left and steer right.
Set up all your fire buttons the same way, switch mode, throttle, cockpit views, etc.

Thank you all for your input, I really appreciate it. Turns out that the USB slot that my joystick was plugged into was damaged and wasn't working properly. I tried a different USB slot and it works perfectly and it's responding perfectly as well. Not quite sure what could have caused this, but the good thing is that it's working properly. Thank you all again.
