I really like the idea of being able to draw a trail of gasoline, that could lead to some interesting strategies.
The main thing I want is more weapon upgrades. Like you would find things that would give you a certain advantage, but would be a disadvantage in different ways, like say if you had a silencer that would let you shoot near witches without them getting angry, and you could shoot in areas filled with infected without them being attracted to you, but it would do slightly less damage, that type of thing.

more music instruments maybe ? like a Bass guitar , a Mandolin or a Ukulele. Maybe the survivors will enter a music shop and take the instruments from there like the l4d2 survivors did when they entered a gun shop.

IF there was a third, I'd like to be able to use the environment to kill the zombies i.e. shooting something down which is dangling from a rope or something

How about some sort of deployable IED-type thing... lol
Like you could put one down for infected that were behind you... Tripped by a laser or something. BOOM!

I'd like to see a greater range of weapons, nothing specific, but varied SMGs, assault rifles, and pistols. Different weapon stats would be nice, but even just purely aesthetic differences would be okay.
If I had to pick a weapon I would love to see in the game, it would have to be am MP 40, just for some WW2 nostalgia (if Valve ever decides to make a Nazi infected campaign).
Also, the pulse rifle from HL2.

It would be extremely difficult to balance weapons like a flame thrower, double barrel shotgun, tripmines, etc, because weapons like these would either be OP or UP by a long shot. Plus, you gotta keep versus mode in mind on how these additions would affect the infected team.
