    steaks are not supposed to be cooked past medium...any more than that and you are ruining the tenderness and natural flavors of the meat. Many big time chefs or upper level dining establishments won't even cook meat past medium and certainly not past medium well.

    that being said, i like most of mine at medium but stuff like prime rib has to be rare to medium rare...yum
