Battlefront and Jedi Academy. Battlefront if you want a run and gun shoot em up star wars game (with some starfighters as well), Jedi Academy if you want the closest you will ever find to a Jedi Simulator. Jedi duals for multiplayer, and there are some really neat mods out there for it as well. But I have no clue right now what the state of the community is in.
