Not all shirt/apparel types have the option for other colors besides white. I bet if I went into cafepress and looked at that shirt type, the option for multiple colors would be unavailable.

Hence, if you want brown, you'll have to go with the apparel types that allow for colors other than white, as with the link BD posted.
