I'm lolzing because I'm Chinese. (HK specifically) Same as your GF, born in America raised in as a 1st gen american.
Traditional Chinese parents are just like the to be honest. True, I would consider it racism. But, hey, it's how they think.
Now that I'm going to explain my POV, I want to offend no one so ahead of time, I mean not to.
But yeah, Chinese or asian parents in general just want their child to marry someone who speaks they're language be it Mandarin/Taiwanese in your case. Culture clash is another thing, I think asian parents like to have a counterpart they can talk with about just anything relating to the motherland (lol) about. I didn't read through all 7 pages of this so maybe you already know this stuff.
Another thing is that her parents don't want to change. As in, lets say you get married, the parents would have to adapt to eating differently such as american food vs chinese food or having the grand child become to american-ized. As in they want the grand child to retain chinese/taiwanese traditions or just know how to speak fluently their language.
Anyways now I'm just blabbing on but you get the point. Traditional parents want their kid to marry their own kid. Maybe if she was a 2nd gen American you'd be fine. But she's not XD

I never said I was a hardcore Christian. I believe in not judging someone because of where they are from. Judge a person based on their personality.
Racism eh? Well going off my blood lines I have a lot of Asian heritage. They haven't met me so they can't technically dislike me.
The food thing doesn't bother me. I am not super close to my family. Ethnic cuisine would be amazing I love it. Had it quite a few times and loved it. Wouldn't make her parents try to become "americanized".
My gf is a typical girl. She is quite the normal person. She doesn't mind our differences, she embraces them.
