Suggestions for a Galaxy s3

I prefer swype beta over swiftkey at the moment. When the new swiftkey comes out with swype like capabilities i'll probably go back to swiftkey

I'd say try to see if xda developers has what you need. It's what got me to first root my phone and find the joys of custom ROMs. Still running the Samsung Captivate. Without XDA i'd be stuck on Froyo or a gimped version of Gingerbread. Running AOKP right now and smoothly too.

What about Media Players? I listen to lots of podcasts as well as music (not that makes too big of a difference). The ability for it to "remember" where I was in a podcast is my main focus. Also, ease of making playlists and organizing the media is a nice bonus.

I just use the stock player. But I only use it for music. The stock video player is already pretty sweet. I really dig the picture in picture thing it can do on the homescreen. It also plays from DLNA sources and I have not found a video file type it can't play
