No problem! If you are getting hot, get rid of the plastic! It cuts down on airflow tremendously and can cause you to sleep hotter than normal. A waterproof, air breathable cover will do the same job.
If you choose to go the warranty route, which you should if you meet the criteria, take clear pictures of your dip without the cord/ruler, of the whole bed to highlight its cleanliness, then another of the dip itself with the ruler and cord to show the inches. Take those when you go to your retailer.
Depending on the reputation of your retailer, the process can be as simple as "Here's proof of my defect" "Oh yeah, we'll swap it out next week!"; to them trying to make you jump through hoops hoping you'll lose interest. I believe Sealy only requires photo proof of the dip, nothing else.
It doesn't cost the retailer too much (just the labor involved in swapping the mattresses out, which you'll pay for more than likely unless you want to pick it up yourself, and the brief time to file the paperwork). Sealy refunds them the cost of the defect mattress. So, if you've got a clean bed and clear photo proof, don't settle on a run around. I mention that because there are some sleazy retailers out there that have no concept on service after the sale, which give our industry a bad name.

Yes, just get a memory foam top. I got one for my King for around $300 and it was the best decision ever. If the mattress needs to be flipped... not a problem. Flip it, and then put the foam top back on.
