I've found that keeping all that old hardware around just for these games ends up taking up space. It becomes that pile of junk that your always going to pull out and set-up one day, but never get around to doing it.
The emulators do a fine job with the DOS games. Where we're lacking good emulation is all those early Windows games, a lot of those just plain don't run on Windows XP/7 natively.
I'm actually thinking of getting rid of my collection of consoles after I get rid of all these old PCs. I had big plans for all this stuff at one point, but now it just sits there begin useless. -,-
The old days were fun though...running Windows 3.11 on a 486 and closing it down so you could access your games from pure DOS. My favorite game from that era that wasn't a FPS goes to this:

Awesome game! I need to track down a copy of it and give it another go. The dog fights are so much fun and you can make custom missions. So you can have old school P51 Mustangs dog fighting with MIGs (always a challenge! ).

When I was moving to my new place, I found my old copies of Crusader:No Remorse and No Regret. This thread just reminded me that I still have to get DOSBox set up on my machine so I can revisit them. Those have to be my favorites from the old days that won't run on any windows system.

Crusader had the best opening FMV ever that's for sure.
If anyone wants to try them, there are pre-configured DOSbox versions of The Elder Scrolls: Arena and The Elder Scrolls: Daggerfall..I'm an idiot and I can't follow directions. So now I'm also banned.
