Need suggestions, pizza sauce.
So, I'm making a pizza for someone tomorrow. Someone who thinks making a pizza yourself at home is a sham, and that it's better to order. Those of us in the know already know that this belief is a crock. So, to the question.
I'm looking for suggestions as to a brand of sauce to use for making a pizza. Or, if you have one, a recipe for making my own sauce all together. I'm reluctant to grab just any old sauce of the shelf for this occasion. I want something that's going to teach her the truth. I'm going to pick up some nice pepperoni (all she wants on it, and not that prepackaged crap) and some good quality, fresh mozzarella. Anyone have some to offer? Gotta know before 5pm tomorrow.

Here's the basic tomato sauce recipe from Mark Bittman's "How to Cook Everything" book.
* 3 tablespoons olive oil
* 3 cloves garlic, lightly smashed, or 1 small onion, minced (Deus's Note: I'd do both, personally.)
* 1 28-ounce can whole plum tomatoes (Deus's Note: Grab the peeled ones, makes life easier.)
* Salt and ground black pepper, to taste
Warm 2 tablespoons of the oil with the garlic or onion in a medium skillet over medium-low heat. Cook, stirring occasionally, until the garlic is lightly golden or the onion is translucent.
Drain the tomatoes and remove their seeds if you choose to do so. Crush them with a fork or your hands and add them to the skillet, along with salt and pepper. Raise the heat to medium-high and cook, stirring occasionally, until the tomatoes break down and the mixture becomes "saucy," about 10 minutes. Remove the garlic if you like. (Deus's Note: FUCK THAT! mmm garlic...) Stir in the remaining tablespoon of oil, taste for salt and add more if necessary. (This sauce ma be covered and refrigerated for a day or two, or put in a closed container and frozen for several weeks.)
That's it. That's all ya need to do to make tomato sauce. Now, personally, I'd add about 2 teaspoons of oregano, 1 or 2 teaspoons of basil and a teaspoon of parsley. For a thicker sauce, add a small can of tomato paste with the tomatoes.
This is also pretty much the basis for a great spaghetti sauce, too. I'd thicken it up a lot more and add way more veggies and meat, then slow simmer it for an hour or two. But anyways, I've done this before and it's stupidly simple.

My spaghetti recipe, for example, starts there and gets the following: a pound of Italian sausage, a pound of ground bison, mushrooms, onions, MORE GARLIC!, carrot shavings, cabernet sauvignon (for robust sauce) or whiskey (for sweet sauce) and diced bell peppers.

I'm open to any suggestions beyond basic. I do enjoy cooking, so I'm not squeamish. I am (semi-)single, though, so I tend not to bother cooking extravagant meals for myself. No reason to spend an hour or two with nobody around to appreciate it.

Classico Traditional Sweet Basil tomato sauce + a smash of oregano (fresh for the adventurous) + one ultra-finely chopped and sweated onion (if you're a wuss, use a fine cheese grater instead of chopping, or alternately use onion powder, for those in a true rush). Simmer for 10-15 minutes until delicious.
