Sorry, I'm in not LA. But I wish I was! The store that I bought this stuff at is in northern MI.
The sausage had natural casing and the fish was smoked prior to stuffing with peppers, so it can be eaten cold. That's what we did at the counter with about a 2" sample. I bought about 18" and heated it over an open fire. It was delish. Best part is that only one other person would eat it with me. That was catfish0007. We feasted!
And to everyone else - crawfish boils and fishing neighbors FTW!
Damn I love me some seafood. ::blush::

That probably makes the wife happy. If you do get the chance, I highly recommend traveling over to the west side of the LP to check out the Cherry Republic. Lake Michigan fish is awesome, especially if you catch it fresh.
