You know, now that you've put it in my head, the wheels are spinning. One thing that popped out:
I'll bet that with a little experimentation you could make a killer mole mayo. Chocolatey, peppery, a little sweet, a little spicy... damn, I'd dip a fry in that.

@dicks71: I want to use it as a dipping sauce as well as for an andouille and beef burger and a fried chicken burger. I also want to use it for a spicy tuna dish with tempura flakes.
@Ae: I´m trying it just because I love to play around with new tastes on different recipes using different proteins. But yea, doing your own mayo definitely makes it much more authentic and delicious. We portion all our dishes every monday and make all our sauces monday as well, so as for the process, it wouldn´t be an issue. If it comes out deliciously good, I´ll put in on the menu. Yea, I´ve got a pub which seats about 100 pax. and a restaurant which seats about 300.
I´m currently working on a new one with an asian fusion concept....quality, gourmet-ish fast food...if you follow me...something like Gigi in Miami (Midtown), Zakaya also in Miami or Bachi Burger in Las Vegas or Momofuku in NY and Toronto (look these up online, they´re amazing). There are plenty of these kinds of joints sprouting around the U.S. It´s a fabulous trend because it really is amazing food. I want to have pork, duck, chicken and all sorts of seafood dishes on the menu.

Oooooh!!! What types of local fish do have down there? Anything you can't get up here? Also on that note, you could try your hand at making your own Sriracha/Cholula type sauce with local peppers/chiles. It's not too hard, but just takes time. No where near as much time as for making sauerkraut though.

What the ever-luvin'-fuck, Xav-meister? How long does it take to make MAYO, fer chrissakes?
Either tell us how the recipe is evolving or man-up and admit that you haven't done shit.
"Asian Fusion" is last-century's news around here. That doesn't mean you shouldn't do it - I think there's still lots of room for experiments to discover wonderful (and profitable) combos. Pho is only decade-old news.
Noodle shops are more recent. Plates of cold noodles, or hot noodles, or noodle soup, with subtle or insane combinations, is what I see going on lately. In (on?) the Pacific Rim this is multi-century-old news, but here in the New Hemisphere there are a lot of people who haven't played this game yet.

We are in London for the Cowboys game. We ate at Gordon Ramsay's London House. I had crab tortellini, beef cheeks and spinach with a walnut cake for desert. The Mrs had a duck appetizer and a hake. It was divine. And not terribly expensive.
