Even though I am not a biblical scholar, I can probably answer.
Initially Jews thought that pork and shelfish were unclean because of what they fed upon. Often times people would get sick with trichinosis. It was a law to protect the Jewish people. Now however such "laws" are no longer necessary because we know more about cooking and disease thanks to science. We now know how to cook these foods so we as a people do not get sick.
On a side note if the bible preaches peace and tolerance, how come there are still those who do not tolerate equal rights? I never understood that.
