    I know it sounds bad, but keep an eye on your employees. My buddy owns several BBQ joints here in FTW, and they recently added a software to their POS that analyzed the data for potential theft, wait staff effectiveness, etc. They did an evaluation on their old numbers and found one girl that potentially was stealing anywhere from 15-30K per year from them. Needless to say she wasn't the only one, just the most blatant.
