Of course, Im not opposed to brains, I was more concerned with how safe brains from a butchered pig would be.
Funny story, we watch food network a lot on Sundays at my parents house. I think Iron Chef America was on, and a guy was preparing sweet breads with panko and then doing a skillet fry. My mom asks "why would someone want breaded bread?"
We are looking at doing a goat soon, we have the pig pretty well mastered at this point.

Goat is fucking SICK!!!!! In a great way. More flavorful (in my opinion) than Lamb. Less greasy and gamey too. Lamb fat congeals at a higher temp than does Pig, Goat or Beef, so it leaves that filmy feel in your mouth quicker/easier. That is why I will only eat Lamb when it is piping hot..........
