Jason, good call on the "deglazing" of the pan. Next time, instead of water you should use a lil balsamic vinegar and a little chicken stock........

Elk is good.. I like a nice BBQ elk tri-tip from West Brother's BBQ in Eugene Or. Good stuff.
Bear is nasty.. oily, coarse, stringy. Squirrel is gamey but you can garlic that away. Quail is yummers...
Ahhh... I miss the flavor of delicious murder...
