My guess is that the cone-shaped areas are the portions of space obscured by the stars in our own Milky Way.

Telescopes and instruments of all sorts are apparently used for mapping the universe. In addition to telescopes such as Hubble, there are scopes that measure x-rays and gamma rays, scopes for UV and infrared radiation, even gravitational wave telescopes.
