    Plenty of places will put peppers on your cheesesteak. Most if not all have it as one of the many add-ons. Onions, Mushrooms, hot peppers, sweet peppers are the most traditional.

    When I lived in the Philly burbs, I spent an entire weekend sampling cheesesteaks from the big name purveyors. Pat's, while the most famous, is the most overrated... He does the Cheese Whiz... not a fan of the whiz.

    Bobby's losing recipe has all the elements yours does.
    No hot peppers, no southwestern flavor profile, and he uses a provolone sauce; not my sandwich. While it lost, it is probably delicious, but mine was better.

    I don't mind cutting on whatever; as a professional I have been cutting on plastic boards for 15 years.

    I have an antique butcher-block from a no-longer existent butcher shop France. When I move into my new apartment I am going to dig it out of storage. It is pitted and worn down badly from over 100 years of use; I love it.

    Pitted and worn down cutting board just means it's easier for bacteria and other nasties to grow in it.

    Soy you should make an ingrediants list thing at the top of each post, perhaps links to previous Cookin with Soys so people can read up on the salsas and rubs and whatnot.
