Honestly I have found the risk vs reward for liquid cooling always ends in favor of liquid cooling, I don't Overclock at all but my computer is so quiet and runs so cool. I can't say what I would feel if my rig got doused in coolant, but I'd be hard pressed to ever go back to air cooling.

Same here. I even lean towards custom water cooled loops, if you know what you are doing. It surely isn't something you should get into unless you are "handy", but I think the overall experience is far superior to air cooling and even the all in one liquid coolers.

Every six months, I drain it and clean the dust from the radiator, and refill the loop. Once/year, I will drain it, remove the water blocks and clean them out (I use all copper blocks, so I typically give the block an acid bath). I then clean some of the components with white vinegar and flush with distilled water, put it all back together, and fill it up. The biggest difference was when I went from hose clamps/barbs to using compression fittings. The compression fittings were much more expensive, but they are rock solid and don't leak.
