Not a memory hog. But a poorly implemented RAID controller coupled with a slow processor can slow down your system. But, even on an AMD 3500+ with the Stock onboard RAID controller I got benefits...
I've got the 680i and I've not been overly impressived with the onboard RAID. I'm using two Raptor 150's in stripe with no parity. It's a bit of an improvement over a single but not worth the money, time or frustration (had to locate an internal floppy to handle the driver since the USB floppy crapped out in the XP install).

2,500 seems a bit much for what you have listed. I'd go with a dual core processor for now, a single raptor 150 with a large 7,200 with 16 mb buffer for general storage and backup. The 900 case is pretty nice with a 200 mm fan on top.

The 780i is nice if you are DEFINTELY going to be doing SLI. Otherwise there are better single card solutions for a lot less money.
