    Steve, i think youll be able to get away with the 4850 on that PSU. Your not off by much and Antec makes decent stuff.

    After messing around with various PSU calculators on the web the recommended wattage for my system would be between 350W at the lowest and 394W at the highest with an average at around 374W
    (This is not for peak wattage but constantly available wattage)

    Any other opinions on whether I should be able to run the card fine?

    That 430W Antec SU-430 has a max rating of 430 watts. I have no idea what else you have in your system or if you are overclocking (and overvolting). I recommend a bigger powersupply to accomidate your power needs.

    EVGA doesn't make AMD/ATI cards... PNY, even with a lifetime warranty is dodgy quality. Never been impressed with their stuff.

    Risk? Huh? 4850 all day long, its a much stronger card that the 9800gt, which is nothing more than a renamed 8800gt.
