Multiple Monitors

If you have 2 cards in SLI/Crossfire and want to use 2 monitors both with HDMI, can you hook up one monitor to each video card (each card I will have only has 1 HDMI each), or do both monitors have to be hooked up to the card in slot 1?

I also need help with this, I have two monitors. My video cards only have 1 hdmi each (Newegg.com - SAPPHIRE 100312-3SR Radeon HD 6950 Dirt3 Edition 2GB 256-bit GDDR5 PCI Express 2.1 x16 HDCP Ready CrossFireX Support Video Card with Eyefinity) so do I plug one into each? Also I have two monitors but I will only use one when I'm gaming.

Eyefinity would make both monitors show up as one, I want them to show up as two initially so I can work. Then when I want to game, I will just deactivate one through windows settings.
