It is kind of hard to learn when your constantly on fire but I guess its all part of the game. Whats everyone strategies for where to deploy sentries and dispensers? I thought it was good to place them together or in groups to avoid players being able to sneak up behind or combine firepower. I guess thats not correct though as after doing such I got a couple of 'OMG our engineers are retarded" so quickly switched classes and joined in "Yeah that guys a tool". Is it just knowing the map well enough to find the best spots or is there a "science" to it?

You normally do not cluster sentries and dispensors together because of 1 reason: the uber rush.
It was learned early on that if everything is close together, one uber rush can take everything out. However if everything is spaced out, they have to spend dedicated time taking out each and every sentry individually.

I'm still in the process of learning proper sentry placement myself, but I have noticed a few things from watching others play engineer (a good way to learn, incidentally). Learn the maps. If you know what paths the enemy usually takes or what areas are good for them to attack from, you can get a better idea of where to put the sentry to counter these attacks or to protect the sentry from being easy pickings. Putting them around corners, for instance can surprise people initially, but this also means demos and sometimes even pyros can use the corner to hide behind, while still being able to attack your sentry. Placing them across from an area where enemies can easily attack from far away will probably get you snipers who can use charged shots to take out your sentry after they snipe you or if you leave your sentry unattended. Other than that, just make note of where sentries on both your team and the opposing team build their sentries and make sure you pay attention to whether the sentry does well, or if it gets destroyed easily.
