Well said everyone. Organization is very important, having a per map plan is not enough, you need to know how to vary it, change it and know where and when to hold when numbers are dropping and or medic is dead. It about territory not about kills. You can kill the crap out of the other team but if they manage to hold a line somewhere it is for not.
Jumping and speed is so crucial. Of the teams we lost to, some of them were able to get out to center faster than us (and I would say we are damn fast). Getting that first few shots in really makes a difference when you only have 6 players.
TF2 is my favorite game because it is infinitely dynamic. Like CSS with free strat roaming but even more dynamic because of class weaknesses and class strengths. You will never end up just "running through" a team with your strat (at least in cevo you wont). Things change so fast and so much it is wacky.
I would also agree with what everyone said pretty much. Try it! Start challenging the teams here, see how you stack up. After about 2-3 matches you will have a feel of what needs to change and what needs to be tweaked.

***Cheese, most teams do use vent or something to avoid exactly that.*** That would be like tapping the coaches headset......
