to me the support classes are spy, sniper, and engi. they aren't really needed to win but are more of a distraction for the other team. good opposing players can easily put themselves in favorable positions to warrant these classes useless.

Yeah I am with Dom.
Offense - Soldier, Scout is a close second but rocket jumping and splash damage > scattergun.
Defense - Demo, Heavy is fun, but very situational.
Special - Medic..... I mean..... credit to team!

Yeah I tend to see classes as Push, Non Push and Support. So basically any class that can give the solid backbone to push (whether it be to push a point or to literally push a cart.) like soldiers demo's pyros and heavies are push classes. Classes that can cause a lot of damage and can back-cap undefended points but can't actually push objectives- snipers, scouts and spies- are non push. And classes that are there just to support the team in a largely non-combat role- Engineer and medic- are support.
I think the most glaring problem with the class lineup is Demo as defense. As others have noted, a good demoman is absolutely vital to a good offense. No other class has the potential to destroy sentries with as much ease as a demo can.

Offense - Usually Demo, but I also play soldier and sniper as offensive classes a lot. Nothing like being on the frontlines iwth a rifle and pwning people....and that's right I said RIFLE not Gayman.
Defense - Demo/Sniper. Although lately I've been running a defensive spy that has worked out rather well. I've had some really nice rounds on defense in PL maps.
Support - Sniper/Spy/Whatever the team needs
I don't usually think about what the class is supposed to be used for..just what my team needs and what I'm doing better at that day. Yesterday I was doing terribad as a spy for support and pushing...every corner had a heavy or pyro around it, but I switched to another pushing class and did a hell of a lot better.
If my team needs a medic, I usually switch after a few requests to other members. If we're getting raped by spies or need airblast, I switch to pyro even though I suck. If we just need more meat, I'll go heavy.
It all depends on the team's needs for me...although I do have my staple classes I play as though.

Offense: Soldier, pushing the enemy team back
Defense: Soldier, Killing medics
Support: Soldier, Spamming corners
Occasionally I can do above average as sniper or demo, but thats pretty inconsistent so I just stick with what I am good at typically.

Funny, I grouped the classes into frontal, flank, and support
Frontal:
Heavy
Soldier
Demoman
These classes work best when flanking, but are usually the center of attention and can only do so when they have the element of surprise. Some people make the mistake of putting Pyro here.
Flank:
Pyro
Scout
Spy
Supports the Frontal classes with the ability to do high damage from an unexpected angle and then rapidly retreat. These classes have a hard time pushing front lines as frontal classes will eat them up if they try to play as a frontal attack class.
Support:
Medic
Sniper
Engineer
Support classes are just that. The engineer is almost a class on his own.
