I recommend you give soldier or heavy some time too. A lot of the tactics for both of the can be applied to most other classes, plus the basics for those two are quite easy to learn.

Also, never underestimate the power of certain classes in certain roles. Though Scout and Pyro are considered "Offense" classes, I've seen players work miracles with them on defense. Similarly, Demomen are probably one of the best push classes in the game when Engineers are being heavily used.

I was gonna spend a lot of time In Medic, then Casually Make my Way into Either Heavy Or solider.
