You can get a cvar dump on the server command line. All LS cvars start with "ls_". Metamod might also have a "dump just this plugin's cvars" command. In fact I think it does... type "meta help" and look for something useful.

in game, in the console, you can type "find ls_" and it should show them all.

Oh and LS itself has a command called "ls_list_commands" that you can use to list all commands you have in-game access to based on your accounts permissions
