first of all i think its pretty stupid to give an opinion on something you have never tried.
anyway
in Bolivia we call it "enrollado" and they wrap the meat with the skin before steaming or boiling or whatever u do.
a little vinegar and paprica sprinkled on top of a bed of letuce yuuuuuuum
but the classic is a sandwich with pickled vegies ( cause vinegar with it is awesome)
