    Sapiens' culinary win thread.

    Making ghee and pressing my paneer right now. About to start rice and make the dough for naan. Pics to follow...

    Maybe after I get my technique down. I am very new to cooking Indian food. I have eaten more than my share, but now I am cooking it and I am fumbling along... when I figure it out I will make some videos. I think i could do the TV chef thing... with my big ass knives.

    . I went to a Williams-Sonoma today..I wanted to buy everything..I love that store.

    It does cost for good stuff, but Will-I-Am--Sonoma isn't always value for dollar. A good restaurant supply can be a better source.

    Also, how are you cooking the naan? I mean, what sort of oven do you have?

    Good naan is a rare treat in the States. If you could replicate the paratha I had in Kerala, you'd be the goose who could lay the golden bread.

    I am not using a tandoor. But I do have some good 'ol cast iron skillets and a convection oven. So between the two it is working out. The naan is a more traditional unleavened variety with yoghurt.

    Chicken korma with cardamom-turmeric rice and homemade naan. The "beige plate" is rather boring... if not for personal devouring (or for the next photo op) I would fine chop some parsley or chervil to sprinkle over it.
