    I experienced a bit of this last night. I am not too familiar with the minecraft code base, but I have heard it has some memory management issues. I have found that the default garbage collection of the JVM is quite lacking when it comes to programs which use large amounts of memory. Sometimes this can be helped by using aggressive garbage collection settings.

    -XX:+AggressiveOpts
    -XX:+UseConcMarkSweepGC
    -XX:+UseParNewGC
    -XX:+CMSIncrementalPacing
    -XX:ParallelGCThreads=2

    If that does not help you can use JConsole to monitor the running JVM which may help to figure out what the problem is, and the best way to fix it. It has been a few years, but I have some experience tuning JVMs if you need any additional help.
