Mayo on fries isn't bad. My guess is unless your house is just nasty you don't have to refrigerate ketchup after opening, but at some point someone got sick, sued, and now they put that on the label to CYA.

I'm all about ketchup, cheese, and hot sauce. Mustard only belongs as a flavor enhancer of egg salad / deviled eggs, and to be used as a coating on roasts / smoked bbq meats before cooking. Although I've had a bad run in with honey mustard, which probably sways my opinion.
