Apparently, according to research done at Zona, oregano can reduce the risk of cancer from grilling meats as well as inactivate e. coli. Mainly posting it here as thought it was something interesting, and personally found it pretty awesome (it came up on UA's facebook).
Adding oregano to meat before grilling could reduce the formation of potentially cancer-causing compounds by up to 78 percent, University of Arizona researchers have found. The spice also helps inactivate harmful E. coli O157:H7 in the meat...
So if your worried about getting "grilling cancer" or E. Coli, just throw some oregano on that meat before you grill it.

I'll be honest and say i was never concerned with getting cancer by eating. The ecoli part is kind of interesting but i thought (and i could be wrong on this) if you got the meat up to a certain temp it killed the bacteria anyway. Of course i eat everything medium well anyway. So maybe this helps those that like it rare.

rare! well med rare but I dont want it burnt! and the more well done is where the cancerous chances go up if I am remembering correctly from a previous article.
Several epidemiological studies have shown a possible correlation between the consumption of well-done meats and different types of cancers in humans.Last edited by flame; 12-15-10 at 09:16 AM.

Re: The power of Oregano on Grilled Meat
E. Coli is more of a problem for ground meat than it is for steaks or any 0other slab meats. I don't eat burgers under med/well if I don't grind the meat myself or if the establishment doesn't grind their own meats.......
Other than that, I have no concern about catching cancer from eating grilled meat. Unless you grill meat for every meal, I don't think ought to be much cause for concern for anyone.

Yeah, as long as a steak is seared, there isn't much risk of ecoli. Ecoli isn't naturally in meat, it's in the intestines, and it only gets on the meat from contact, so only the surface of a steak will have any ecoli. Ground beef is all mixed up, so it's more of a danger there.
Rare or medium-rare steak (depending on cut), medium rare burgers for me.
