Mayo is awesome on a burger, I especially like a bit on a mushroom and swiss burger sometimes. Ketchup is most of the time for a basic cheeseburger (the kind with american cheese), and mustard is only for that kind of burger.
Flagstaff has a place with a goat cheese that is really creamy and the best "sauce" (that isn't a sauce) ever though.

Xav try this (I forget the measurements so just fucking be a rockstar and not scientific like).
Pork ground (best quality)
Salt n peppa
Chopped up cilantro
Shallots finely diced
A tad of parsley
Egg
Blend up some old kick ass bread into crumbs
Sprinkle of apple cider (drink rest, or add some to your bbq sauce)
Figure that shit out and that's a tight burger patty. Serve on a pretzel bun for sexy bitch status, make sure to make it fabulous by popping thinly sliced apples into the burger with brie cheese, rocket, and bourbon flavoured bbq sauce.
Sit back and watch your mates go ape over what shouldn't be so fucking tasty! Result.
