Also, it's pretty easy to make your own pickles, kosher or otherwise. Alton Brown has an episode of Good Eats on the matter. You have to wait while they get freaky, but if you can't buy any...enf-Jesus its been like 12 minutes and you're already worried about stats?! :-P

You're sorta correct: The standard, across-America, generic "reuben" is served with some variation on Russian dressing. Sometimes it's "Thousand Islands" or another variation on that theme. That I know of, there is no standard recipe for either of those.
But in New York, you're mostly not correct (especially if you want to go to Katz's). A lot of places will serve their standard Reuben with both Russian and mustard. It's awesome. The Carnegie Deli serves some of them that way, and also has mustard on the table. For some people, the argument over who has the best Reuben comes down to which sort of mustard they use (German style, Dijon, or some honey-mustard concoction). Lots of places serve it the way you prefer too. But keep in mind that plenty of restaurants in NY are purely for tourists. They'll serve food that meets their customer's expectations of what "NY" is.
Same with a bagel and lox. As far as I'm concerned, if it doesn't have shaved red onion and capers it's faker than the dodgiest con in Cheaterville. But that's me, and I'm not Jewish either. A lot of people would recognize my preference as standard (I would say: Classic), but there are other ways too. Strangely, not everyone likes raw onion with their breakfast.
Speaking of Katz's, I never thought it was all that. There may have been some hey-day that I missed. Don't get me wrong, I think it's a good deli, and good food, but it's not better than many other places you could go. If you want an authentic Katz's experience skip the Reuben and get the tongue.

Fuck, now I want tongue since I noticed that place has it. I haven't had tongue since the last time I went to the taco truck in Ruston, albeit it was probably cooked differently.
