Also, it's not like a pile of raw chicken livers. Haven't you ever had stuffing made with the giblets?
Full disclosure: I'm not likely to order the chopped liver or the tongue. But I've had them, and I get it. It's just not my preference.
What I don't understand are people who will eat a factory-produced Ballpark Frank or Oscar Meyer Wiener but not even try kosher tongue cured on-site. That's like eating scrapple or head cheese, but thinking bacon is gross.

My favorite pickled things:
Cabbage (mainly sauerkraut)--I don't make sauerkraut. I can buy good, non-vinegar sauerkraut and not have to wait 3 months to a year (making it traditionally).
Onions (I like them spicy)
Garlic (any which way)
Now I want to try some Kambucha.enf-Jesus its been like 12 minutes and you're already worried about stats?! :-P

You mentioned bacon, now I also want to cook some good bacon, freeze, and then eat it once it's cold. It doesn't freeze solid due to the fat; it's like candy.

I would drink kombucha all the time when I was living on the west coast - it was basically free for me. Back east, my brother-in-law makes it at their house. It's really (really) easy to make. He's got some stopper-top beer bottles, and will bottle a batch and start another batch right away (keeps the mother going). Since it stopped being free I've mostly stopped drinking it.
He found someone who gave him half of their mother. It grows, and eventually you'll need to either throw or give some of yours away.
Same with kefir. After each batch you rinse the grains and then reuse them. But it's alive, and you're feeding them, so they grow and produce more colonies.
You might not have any good delis near you, but there's got to be a huge community of food nerds. Go to a food co-op or local whatnot and ask around. I can pretty much guarantee that someone will have kefir grains or a kombucha mother to share.
