And speaking of warranty I personally see no reason to spend $460 on a processor and void it's warranty right away by going with some crazy heat sync or water cooling action. Granted I would be temped to over clock that puppy just like the rest of us, but that system will be pretty sweet as is and you can always over clock later when it doesn't have that new "holy shit this is fast" feeling.

Wait a second... I know I am a little late on this post, but why would you even consider running crossfire or SLI? It is a huge waste of money. Besides, dual video card configurations are on the way out. There are already dual GPU cards on the market, and dual core GPUs are next. For the record, Maximum PC compared Crossfire to SLI... SLI stomped Crossfire in every test.
You are better off running a single 7900 or x1900 card and saving yourself $500.
You need to be a smarter shopper. $2000 is a lot of money to spend on a PC. I would salvage what I can from my old machine (Hard Disks and Opticals and stuff).
Here are some price guidelines for building a good PC (and saving money)
$300 - CPU
$450 - Video Card
$100 - Mother Board
$120 - Memory
$75 - Zalman Cooler
Cases and stuff will of course be extra.
I have been making gaming machines for 10 years, and trust me, You do not want to buy top of the line parts. It sounds nice and will run awesome, but it will depreciate so fast that you wont believe it.
Whenever you buy a computer, you have to understand that those parts lose value very fast. You always want to buy the parts right before the price jump (with the exception of a good video card)
I have seen a single ATI x1900xt system run almost a score of 10000 on 3dMark05. I am pulling scores of 8000 with my X850XT Platinum.
You will not see that much of a performance boost by running dual cards. You will simply have bragging rights.
