I don't eat cows, pork or chicken (or I eat less of it) because I don't like the taste. It's all too bland and I have no idea how it became so popular. It's also possible that It's just me who can't taste it because everyone gives me a blank stare when I say that like they have a wet dream every time they eat those things...
I'm a seafood person. I love any fish, eel, any shellfish really... I love me some turkey... A burger is good every now and then but I mostly taste the cheese and toppings with the meat tasting like grease... Realizing that all I really taste is the grease, I don't think I'm really interested in burgers anymore XD...
I also avoid corn products, I sparingly drink HFCS drinks and stopped drinking soda a fw months ago, I love me some beer though!
I don't choose not to eat red meat because of the health benefits(or not?) but it just doesn't taste good to me.
The guy who wrote the book is a bit overbearing, he says he doesn't want to tell people to change their diet then says that eating less meat is better then he talks about the political implications of vegetarianism. He's kind of funny really..
