SO what stops a university from just idk, say writing a student down as straight A's for every class and graduating them without actually requiring them to take any classes? (aka HI, heres your "diploma" bye"

They need to be accredited by different organizations, at least 1 regional or national I believe for it to be valid. Everyone knows that no one will have 100% A's for all their classes. They're suppose to review programs I believe as well.

Pretty much part of the BBB as well to say that they themselves are legit. You might be able to contact them if all else fails.
I'd check to see what accreditations your university has and try to contact them actually. Basically you aren't getting what you were promised or what the university promised they'd deliver so those people should be able to look into that. Without accreditation, most employers probably won't look too highly on people with degrees from said institution, and with that then what would be the purpose of going to said university? In theory nothing. A while back there was a player in the NFL (I think Charles Mann) that went to college for either 3 or 4 years, but had the reading ability of a 3rd grader. He never had any problems passing college level classes though. He says he had other people doing his work for him, but he was credited with the grades. I am sure he is not the only example.

including students, against either an accredited program or ABET itself that are
related to compliance with ABET’s standards, criteria, or procedures and to resolve
any such complaints in a timely, fair, and equitable manner. Furthermore, it is the
policy of ABET to retain all documentation associated with any such complaint
received against an accredited program for a period of not less than one accreditation
cycle (typically six years), and for a period of not less than five (5) years for any
complaints received against ABET itself.
