JuiceDefender.....The free version is all you really need, but the paid one has all kinds of settings to play with.
I use PowerAmp for music, and have been pretty happy with it....although, it's no itunes.
IHeartRadio and TuneIn Radio are both pretty decent for listening to local radio.

Foursquare, Glympse (Social GPS, good for people who don't take directions well), Color Flashlight, Ringdroid (ringtone creator out of your music), Smart Tools, Spotimote (if you use Spotify), Steam, SwiftKey, SoundHound (feed music into it, it tells you what it is), Barcode Scanner.
The one I find most important with mine though (and I know this has saved my accounts several times, too) is Google Authenticator for all your Google accounts. Pretty much impossible to get into your account without your phone sitting in their hands.

Nice phone. I sure love mine. The third party apps I use the most are Torque (a must for gearheads) Uylsee speedometer, Tapatalk, Facebook, Steam, and Quick Office.

I take back the Facebook app. I started paying attention to what it was doing in the background and I didn't like it. So instead I just put a shortcut to the mobile site on my home screen and it is exactly the same thing but never runs in the background.
