Okay, so it appears that you should be fine with a single GTX 690 for most games. I think there may be some more demanding titles where a single screen will have to suffice.
NVIDIA GeForce GTX 690 Review - Dual GK104 Kepler Greatness | 3D Vision and 3D Vision Surround Testing
You may still get better results from the additional frame buffer of the 4 GB GTX 680 cards in SLI, my experience with the GTX 680 is that they are kind of a noisy card when compared to the GTX 690. The 690 is quiet, and stays pretty cool in the process. Even when I overclock it and run the fan at 100%, it is probably half as loud as a single GTX 680.
I think the 690 along with the 3770K would be a pretty good combination. Wait for the next big platform release from Intel and upgrade the entire CPU/Motherboard platform.

Re: Massive CPU Upgrade
Thanks for all the input! I've been wearing away at the details trying to decide what I want to do. It's looking like 2x GTX 680 + 3770K for the near future. However, I have a 750W PSU...
Final Question:
Do I need a bigger PSU? Everything I've found seems to suggest 550W for a single GTX 680 with an additional 195W for extra 680s. Does that initial 550W cover everything else, i.e. CPU, memory, drives...?
I was using this for reference:

You can use this power calc to be sure...it will give you the minimum stats..add about 25% to whatever number you get from there. Newegg also has a power calc...I did a little guessing but you should be fine with 750w.

Re: Massive CPU Upgrade
Thanks Illusion, I looked at the Newegg power calc and it says I need 763W... which would be riding the edge of whether I should get a PSU or not. I guess the next logical step would be to ask what everyone thinks about PSUs? I have no clue what I'm looking at other than Voltage, Amperage, and Watts. Even then, all I know is I need X units to satisfy Y components.
