Children's Hospital Build Question
I am trying to decide if I should throw a normal aftermarket air cooling heat-sink in the system or try and get Corsair to donate like an H60 or H80 water cooler.
I don't see the hospital patients needing the performance of water cooling, but the better your cooling the longer the system lasts usually.
Any opinions?

Rumble's going to donate it as a gaming machine.
If the computer's case has good design, and thus good airflow, an aftermarket air cooler will keep temps below 60 C, which doesn't match what a water cooler can do, but is more than safe for long time use. As a bonus, the GTX 560 in there is pretty efficient, and so shouldn't heat up the insides too badly.
However, as others have said, a corporate donation of a water cooling solution would be best if you can get it. From what I gather though, you're going to be using an LGA775 processor. The H60 will fit it, but if you're unable to get Corsair to float you one of those, the Cooler Master Hyper 101 should do fine. I'd just go with a good air cooler. Temps aren't significantly worse, and unless you are OCing it the slightly better temps aren't going to make much difference.
If you really want a great cooling fan/heatsink:

I would also recommend a case designed for positive air flow so you don't have to clean out the dust as much.
