I tried to help someone get this to work with WoW a while back, I vaguely remember finding some possible apps/hacks to make this work, but dont recall ever actually having any luck. Ill try to look back on my old guild forums to see if I can link to anything.
Your best bet is probably google if it is at all possible

So, if I understand you correctly I can plug both monitors in the same card and still run dual monitor and it will switch to SLI when i game? I don't know how to enable this. I have nvidia 7800Gt's from EVGA. The other issue is I'm running Vista and the drivers for it are still catching up from xp. I'll have to do some searching I guess. Any one have any experience of this actually working with modern day equipment.

is it just a matter of extending your desktop onto 2 monitors?
correct...you should be able to just plug both monitors into the primary, and w/in the 'display properties' settings tab, you can select to 'extend desktop' box, then check off which display is the primary (should be a 'displays' drop-down about the center), and viola, you have twice the desktop real estate. and as already noted, when you load up a game/3d app, then the secondary monitor will simply shut-off until you exit back out...i would only assume that SLI would switch as needed once you load 3d games/apps. (im still running a single lowly 6800gt, so i dont have any hands-on SLI exp., but i imagine theres not much differentiation :P ).
nvidia also has a little thing called nview, under the advanced settings in the display properties (where you can tweak the nvidia drivers a little more), that i think has extra desktop attributes to play with, in terms of dual-displays.
