proposed build looks fine. Somewhat close to what I have now.
If it were me, I would likely drop the soundblaster as onboard sound is plenty good enough these days. And go to 32GB (4x8GB) since the board is quad channel and if you want to upgrade later it's always better to use one bank instead of both banks. The more you futureproof now, the less upgrading you need to do later. Likewise with the 256GB SSD. Perhaps a 512 or 1TB SSD. If you go 1TB SSD you can dispense with the data drive entirely or use externals via USB3/esata.
Just thoughts off the top of my head.

Thanks guys. What's the opinion on the water cooler an it's maintenance? Not really dealt with them before so any insight would be great.

Just keep an eye out with newegg, before I picked up the corsair graphite I'm using now I got into the habit of checking newegg once a day since they seemed to change their case prices regularly, the price has been seen to fluctuate by big amounts on some case man/models so I'm sure you'll get a good deal, especially if you wait till black Friday time on whatever you decide to go with

Let's pump the brakes one some things really quick. First off, as an X99 owner AND an Z170 owner, I can tell you that you are wasting your money with the X99 chipset for games, unless you plan on taking advantage of the PCIE lanes. You are locking yourself into more expensive motherboard, CPU, and likely more memory if you want to run in quad channel mode, with very little, if any gains at all in gaming.
I highly recommend getting a Z170 board with some nice features, and get nothing more powerful than an i7-6700K CPU, which is a perfectly fine CPU for gaming. Instead of getting an X99 board, maybe consider getting a bigger SSD or a Gsync monitor. You won't get much of a return by paying for the extra $100 for the 6800K, plus the additional $50-60 cost of the X99 motherboard.
