Re: Debating on new video card
My current machine is SLI capable but I only have one video card (nvidia 7900GT). It's a little over a year old and now, I wouldn't bother purchasing a second card to match it today. I would just replace the card all together. Video card technology is jumping leaps and bounds over itself. Unless you plan on starting with SLI and 2 new cards, you are probably fooling yourself that you will come back later and buy a second card rather than just upgrade.
Check TomsHardware.com for the VGA Charts. It can show you what to expect in performance differences between different cards.

Re: Debating on new video card
I highly recommend getting the 8800 gts 320mb or the ATi 2900pro.
I have found that unless you are buying 2 of the very top tier video cards to push a 30 inch monitor it is pretty much always better to buy a single better card than a double of some lesser cards.
One 8800 gts or 2900pro will outperform 2 8600 every day of the week on every game you throw at it with better quality levels and in game settings.
You want a single 320mb 8800gts or a ATI 2900pro.
Honestly SLI was invented strickly to get people to buy more video cards when 99% of the time a single card is all they need.
