Thanks for the help and recommendations. It is now all over except for the crying... me at the bill and all of yous whence it's together.
As I couldn't wait any longer, I placed my orders around 12:30 AM:
CPU - e6600 Core 2 Quad - I looked hard at the e6750, as promised, right up until I hit 'confirm payment.' My decision was probably as influenced by personal bias as it was performance data. In the end, I don't think anyone could go wrong with either chip.
MB - ABIT IP35 because of all the wonderful comments about uguru greatness and fond memories of my last ABIT MB.
Video - eVGA 8800GT w/ 650MHz clock - because the 8800GT kicks ass and I couldn't wait any longer.
HDD - Western Digital 320GB because 500GB was too much. Easy money in the pocket. Thanks G.
PSU - OCZ StealthXStream 600W
RAM - Crucial Ballistix because Rock told me so and it was slightly cheaper after rebate.
I'll get a sound card and an after market CPU fan some time next year. Then I get to have fun all over again.

Well you broke the seal... I have been going nuts waiting for all the parts to come in... So far, I've only received the RAM and a little side gift (tarantula and an exactmat).
UPS is saying that the rest of stuff is 'on time' for delivery tomorrow. There's a small window where I will be available to pick it up but most likely I won't get everything until Wednesday.
It will take a little getting used to the new horse power but I'll be ready for Saturday.

It's all together and, two days in, I am absolutely pleased, thrilled, tickled pink, etc., etc., etc.
For me, this was by far the easiest, most-painless build ever. Everything was in perfect condition and fired up on the first try. The OS (Vista Home Premium 64-bit OEM) loaded lickety split and liked all my hardware.
I want to thank all of you, (in order of appearance) Mcstrange, Blue Thunder, WileE, G, Deus, Rock, and Rustx, from the pointy end of my rifle (aka bottom of my heart). THANKS!!!!!!!!!!!!

man.....I have got to be chiming in more.
#1. buying a 640mb 8800 GTS is....a waste of cash. And before you jump on me....you know who I am, and I dont' say shit without backing it up. You have a 19" LCD monitor? What's your native resolution? 1280x1024?

Equivalent cards. The only time you're going to see a difference between the two is if the resolution gets high (needing higher textures, and thus more RAM). that's not going to happen at 1280x1024. even at 1600x1200 http://www23.tomshardware.com/graphi...=707&chart=316
Facts. So....spending an extra $50 or more on a 640MB GTS instead of the 320mb

is.....a waste. a 10-15% price increase for a 1% gain. And that's not even model to model. The EVGA 640MB is $379 or so.
Now....the 8800GT is fast....faster than the GTS. But it has lower bit-memory, hence why a slower card like the GTS, with less memory, can keep up with it.
Interesting to see how the war plays out for these cards...but the hype is definitiely with the GT.
