I will use the new processors mainly for gaming. I've heard the E8400 is like the E6850, except cheaper. I also want something that is decent for the future when new games come out as well.
When I go look around for processors, what should I be really looking for, if I want to upgrade my gaming pc?
EDIT: I don't want to overclock my stuff. I just feel it's not worth the risk. Just regular stock is fine.

the e8400 is faster than the e6850.. even tho they are both at 3.0ghz the e8400 will out perform it.
But like i said in my previous post some e8400's have temperature diode problems and they do not read temps right... I would either wait until a new batch comes out or get the e6850.

CPU cache is a cache used by the central processing unit of a computer to reduce the average time to access memory. The cache is a smaller, faster memory which stores copies of the data from the most frequently used main memory locations. As long as most memory accesses are to cached memory locations, the average latency of memory accesses will be closer to the cache latency than to the latency of main memory.

i have the e6850 and love it. Runs without fault, no OC because i dont want to shorten the life of it. I have 3 gigs of ddr2 800mhz backing it up and i couldnt be more pleased. The quad cores dont really have much of a place right now on the market for gaming because the games out now dont use all the processing power except for of course crysis. The e6850 also has speed stepping which means it will run at 2.0 and low power till it is needed to run at 3.0 with a little more power which helps prolong the life of the chip by some. I would say go for the e6850, cant go wrong!
