No doubt with that kind of money you should be going i7, in that price range AMD can't compete.
You should also not be salvaging the crappy hard drive and RAM from your old computer (imagine putting the transmission from a ford taurus in a lambo, yuck). Plus with a budget like that you can easily afford very nice stuff (WD caviar black, 6 GB DDR3).
1000W is most likely overkill for a system with one hard drive and a single graphics card (you have a 4870 1GB correct?), something around 750W is more sensible, so yeah the one in your deal is good.
I cannot stress enough that if you are going to be spending a large amount of money on a computer then you do your research. Nothing makes me cry more than watching someone pay the big bucks for something that is utter garbage.

As for your hard drive, yes you can most certainly do that. Although you would want put your operating system on your new shiny hard drive, and just use your old one for storage.

You will not be able o put your old disk with an OS on and have it work properly. It will either fail altogether or have huge amounts of bugs.
A new mobo is a whole new computer with all new drivers and other goodies. You must reinstall your OS for mobo changes; period.
Just get a new disk. Put it in your new build. Install your OS. Pop in your old disk along with your new one. Copy all the stuff you want from your old disk onto your new disk in a new organized fashion. Format old disk and use it to store....images.
Also: If you are forking at mad dough, and not a fanboy of a particular processor; get the i7 solution.
In the Synthetic Benchmark world the i7's rock the house.
Many games also benefit from the i7 over the X4 955.
With Far Cry II and Stalker, the i7 does slow somewhat compared to the X4 955.
And the i7's rock in terms of most productivity: rendering, compression and A/V encoding..
