I'm rather partial to either the Engineer (theres something deeply satisfying about wandering around the base whilst your sentry does the dirty work!) and - as engineer support or offense, I find I'm a big fan of the Pyro. Pyros make great defense against spys and scouts, as well as good offense on certain maps. They may not be the most damaging but nothing riles a group of heavys and medics than being on fire, leaving any near by demomen or soldiers to take advantage. Yeah it's a suicide tactic but if it takes down a medic and a heavy then meh... all for the good of the team! [/milo minderbinder]
