25 actually. Airblast blows away stickies, reflects rockets and pills back at their shooter, and changes the "ownership" of projectiles to your team, rendering them harmless to you. It also blows people back and up slightly, while killing some of their speed.
It can reflect arrows, flares, and jarate too if you are good enough.

tips tips tips....ah tips. This forums has so many tips on how to play every class you could spend hours reading them all. I recommend finding tips on ONE class and then go to the servers and practice for a day. Every new person seems to ask for tips but everything there is to know is here, look for it my friend.

You forget.... A good pyro is a engineer's best friend, able to keep stickys at bay, push back ubers and rockets. Oh and don't forget those pesky spies. You are right about them being a ambush class. But at times I just can't sit and wait. It's my downfall at times.

Since everyone seemed to ignore your 2nd question:
Demos:
The pills, while hard to use, can dish out a TON of damage in the right situations. If you find a place where the enemy generaly congregate try and find a spot where you can lob the pills high in the air so that they explode RIGHT as they get next to the ground. Only way to dodge these is to retreat (making it easyer for your team to complete an objective) or to push in, hurt and unorganized.
Once you can aim the pills you will find they are your best friend if you get surprised. They do a ton of damage and usualy if one pill hits you can make a 2nd one hit easily. 2 pills will kill anything sept a fully overbuffed soldier, a heavy, or a targed demo.
Stickies:
Stickies (your 2nd weapon) are mostly used for traps. Put them in hard to see places like on the walls or cielings around doors and right click to explode them when an enemy is close. Even if your stickies are visible they still serve a purpose because no one wants to walk over them.
Spend some time finding out how much damage stickies do and how many you need to kill a player. Stickies, like the pyro airblast, can knock an uber up in the air if you have enough of them under the target. For a light class 1-2 stickies will do but the heavyer the class (soldier, heavy, demo) the more stickies you will need to send them flying. Happily once they are airborn your teams sentry guns will knock them across the map.
The only big difference for payload maps is that you can often place your stickies directly on the carts track and detonate them when the opposing team clusters around it. The only way to achieve their objective is to touch the cart so you are garenteed to be credit to team.
If you are going to be playing pyro alot realize your classes weaknesses, you have medium health and no high quality long range weapons. If you can, find an empty server and get a friend to fire rockets or other projectiles at you so you can find the timing to reflecting them. If you are having difficulties try reflecting rockets when a soldier is reloading them. It will give you a set time for when he can fire again.
If you are having a hard time keeping ubers in the air you can just push the medic back. The target wont realize whats happening until its to late and by then the uber will be wasted. Prepair to die if your mucking about with an ubered pair but your death will have saved 1-11 of your teammates.
The demo is the best class at taking out sentry guns. For sentries a Lvl 1 takes 2 stickies, lvls 2 and 3 take 3 stickies for gaurenteed destruction.
Unlocks:
The pyros main unlock is the backburner which gets 100% crit if your behind the target. While this is great if you can flank it also leaves you at the mercy of soldiers and demos, no airblast means your useless till you get close.
2nd unlock is the flaregun: It fires a small ball of fire in a strait line that is effected by gravity. This will do somewhere between 10-40 or so damage to an opponent + 60 burn damage over time. It will generaly force smaller classes to retreat. If the target is already on fire the initial hit will be a mini crit and do extra damage.
The third unlock is the Axtinquisher. It is 100% crit vs burning opponents but does less damage if they arnt on fire. Considering you are a close range class all your opponents should be on fire. This is best vs the larger classes such as heavy, demo, and soldier. It is useless vs other pyros because they dont stay on fire for long.
Demo unlocks:
The demo just got updated with new weapons,
The Eyelander: This is a sword that replaces your whiskey. It lowers your health by 25 but each time you kill someone with it you get a boost to max health and a boost to speed. Harvest enough heads (It beheads people BTW) and you will be almost as fast as a scout.
The Chargin Targe: This goes with the eyelander mainly. It replaces your sticky launcher and every few seconds lets you charge across the map and whatever weapon you have out will get 1 critical shot be it the grenade launcher or your melee. It also lowers damage taken by explosives by 65% and weakens fire damage.
The last unlock is the scottish resistance which replaces your sticky launcher. It can load 16 stickies instead of 8 but fires (or reloads?) at a slower rate. The big upside/downside is that it only explodes stickies your looking at. So you can set multiple traps over many doors and blow the stickies over the opponents instead of exploding all of them.

And I've won against shotgun pyro's when I have flare gun. Not difficult.
I always forget to mention that killing spies to a pyro is like Americans and killin' Nazi's. We love it and hate to stop. And when we fail to kill a Nazi we yell at them and tell them they have a small penis.
